Potatoes are a very subtle neutral flavor, we all love cream/cheese on a potato so we knew there clotted cream would work. The jam is just the sweet contrast! Syrup on breakfast potatoes is delicious so it’s not a stretch you think that jam would also work. I’m not surprised. When it’s all broken down into its basic components it is possible!
But I agree with many others, a full English breakfast on a spud would be delicious!
